Egg Burrito
Came across this recipe on Pintrest and had to give it a try.
I made it ahead for a week night dinner - kept in the fridge very nicely.
The original poster froze them for a fast nutritious breakfast. I like eggs just about anytime of the day!

I was impressed that I was able to make 2 burriots out of full containers.
Now the 2nd whole wheat tortilla means that I have to save all 💛 for dinner.
Not always easy, but when I do my weekly meal plans I do try not to have any 💛 during the day. Dinner usually has carbs for me!

I did for the most part follow the directions as they were written with the following exceptions:
Substituted:
coconut oil for the butter.
Added:
Cumin
Sautéed the ham
Put all tortillas seam side down in the baking dish.
350 for 20 minutes covered and then 5 minutes uncovered.
Delicious!
I used some hot sauce on top!
